Crispy Salmon with Tomato Medley!
Week day meals after a long day at work don’t have to be boring nor does it need to be takeaway! Time and convenience is definitely a key factor that plays a big part in my routine, therefore quick, easy yet delicious and nutritious recipes are a must. This beauty is a 15 minute wonder, so no excuses!
Ingredients – Serves 2;
– Salmon fillets x 2 (Skin on)
– Mixed Tomato Medley 300gms (Some super markets sell a mixed packet, I got the Mix A Mato from Coles)
– Handful Fresh Basil
– 1/2 Hass Avocado
– 1 Tbs Olive Oil
– Pinch Sea Salt flakes
Heat a non stick fry pan to medium. Place your salmon flesh side down and cook for 3 minutes. In the meantime, quickly slice your tomatoes into halves or however you like! Place tomatoes in a small bowl and add basil, oil & salt – toss and set aside.
Turn your salmon to the skin side and cook for a further 5 minutes. Now slice your avocado into thin slices.
Once salmon is cooked, set aside and add your tomato mix to the pan and toss for 2 minutes to draw out those lovely flavours and kick of basil.
In a serving bowl, halve your tomatoes across two serving bowls, then place sliced avo on top. Then rest your salmon across the tomatoes skin side up.
You can drizzle some olive oil and a pinch of salt on top to finish! And that’s it 🤌🏻
Tip! – Cook double and set aside your extra servings for lunch the next day 👏🏻
