Breakfast doesn’t have to be boring…..

Check out this Mango and Lime Lasso Bircher (or mango overnight oats 🤣). The mango pulp is mixed with mint and lime, and it’s all soaked up by the oats. A sprinkling of toasted flaked almonds gives this breakfast meal the loveliness crunch.

But how did I make it I hear you asking. 🤔❓

Ingredients:
✴️ 100g flaked almonds
✴️ 450g tinned mango pulp
✴️ Handful of fresh mint leaves
✴️ 1 lime (you will need the juice and zest)
✴️ 200ml planted based milk (oat milk or almond are my preferred choice)
✴️ 150g rolled porridge oats
✴️ Your favourite toppings (strawberries, blueberries, mango, nuts)

Steps ⏩⏩⏩⏩⏩⏩⏩⏩⏩⏩⏩⏩

✴️ Toast the flaked almonds until golden and put to one side.
✴️ Mix the mango pulp, mint, lime juice and zest in a bowl.
✴️ Pour in the almond milk and half the toasted almonds.
✴️ Mix all ingredients well until everything is combined.
✴️ Put the bowl in the fridge overnight
✴️ In the morning the oats should have doubled in size
✴️ Add you favourite toppings (blueberry’s, mango, nuts, toasted almonds) and enjoy
