B E E T hummus to beat the Monday blues 🎷

Aka beat the post vacation blues that I’m definitely feeling today 😂 but here we are! Brand new week so let’s make it a good one ⚡️👊🏻 Beets are currently IN season & happen to be a ridiculously nutrient dense & delicious veg. Here’s one easy way to fit them into your meals 😉

Ingredients:
1 can chickpeas rinsed & drained
4 cooked beets
1 garlic clove
2 tbsp tahini
3 tbsp lemon juice
1 tsp coriander + 1 tsp cumin
1 tbsp olive oil
2-3 ice cubes {depending on how smooth you like it}
Lots of salt & pepper

Details:
• Add all ingredients to your food processor & blend until smooth
• Taste & adjust as necessary {more lemon or more spice}
• Transfer to serving dish, drizzle with more oil, sprinkle with sea salt, chili flakes & hemp hearts 🥰
• Serve with veggies &/or crackers @evescrackers were a perfect match
