You May Have Noticed That I Absolutely Love Using Beets In M


You may have noticed that I absolutely love using beets in my cooking. The gorgeous vibrant deep red color just makes everything better, don’t you think?
After making one of my other beet recipes I had some left over so I decided to make it in to a soup. Lots of countries have variations of beetroot soup (think of Borscht) but I made a very simple and easy version using just a few ingredients, check out the recipe below.

Beetroot, Coconut & Thyme Soup

3 cooked beets
2 cloves garlic, chopped
2 tbsp thyme
500ml veggie stock
1 can coconut cream

Add the garlic to a sauce pan with a little olive oil, lightly fry until soft. Add the beets and thyme, cook for a little bit and then add the stock. Last add the coconut cream and mix well.
Empty the entire sauce pan in to a blender, and blend until smooth.
