White Chicken Chili hit the spot for dinner tonight. The total points on blue added up to be 5 WITH the toppings! Without the toppings a bowl (or what I estimated to be 1/4 of the recipe) was ONE POINT. ONE. 😮
Here is the deal…..
*2 large chicken breasts
*32 oz fat free chicken broth
*2 cans great northern beans (strained)
*1 can cannellini beans (strained)
*1 bag frozen corn
*1 can rotel tomatoes with green chilis
*1 packet McCormicks white chili seasoning
*1/4 cup FF half and half
*GARNISH- .5 oz Fritos and 1 tbsp sour cream


Throw all the ingredients (except half and half) in the crockpot. Cook on High for 4-5 hours. Remove chicken and shred to desired consistency. Place shredded chicken back into mixture and add half and half.
