West African sweet potato & peanut soup with cauliflower gnocchi. This soup is so easy to put together & finds its place in my weekly lunch / dinner rotation. I used my Instant Pot today but you can make this on your stove top. 2 pounds peeled sweet potatoes, 2tbsp fresh ginger, 1tbsp garlic, 1 small onion, 4 tbsp tomato paste, 1 red bell pepper, 1 carton chicken broth, salt & pepper. All ingredients go in at once (yay!) set to 20 mins and release pressure. Blend with immersion blender & stir in 1/4 natural peanut butter until melted. Taste and adjust seasonings . If you prefer a thicker soup, reduce the amount of stick. Absolutely delish & creamy soup ~ vegan & gluten free too!😋
