We’re salivating over this recipe for Island Sole. A sweet and savoury mango salsa with fiery Scotch Bonnet aioli is dressed onto a Pan-Sear Lemon Pepper Sole. The only thing missing is a few palm trees, lounge chairs and a sandy beach.

INGREDIENTS​
-1 box High Liner Pan-Sear Selects Lemon Pepper Sole​

Mango Salsa​
-1 mango, diced ​
-½ red pepper, diced ​
-¼ cup red onion, diced ​
-2 tbsp olive oil ​
-1 lime, juiced ​
-2 tbsp coriander, chopped​
-Salt & pepper to taste ​

Scotch Bonnet Aioli ​
-4 tbsp mayonnaise ​
-2 tsp Scotch Bonnet hot sauce ​
-2 tsp coriander, chopped ​​

DIRECTIONS​
– Prepare Lemon Pepper Sole according to package instructions.​
– Combine salsa ingredients in a bowl, mix and season to taste. ​
– Mix Scotch Bonnet aioli ingredients in a small bowl. ​
– Serve Sole with mango salsa, topped with aioli and sweet potato fries.
