We’re all about the better-for-you ingredient swaps with this #meatlessmonday inspired recipe:
↳ pasta—> lentil pasta (better carbs, gluten free, protein-packed)
↳ sausage—> @beyondmeat (seriously could fool a meat-eater)

INGREDIENTS
2 Beyond Sausage Original Brats, sliced into 1/2 inch pieces
1 box Modern Table Spirals
Juice of one lemon
1/4 cup olive oil
2–4 cloves of garlic, minced
Asparagus, tough ends removed
1 pint cherry or grape tomatoes, halved
Salt and pepper to taste

PREP
1. Cook and drain pasta as directed
2. In a skillet, heat olive oil on medium high, add minced garlic and cook for 30 seconds
3. Add Beyond Sausage, asparagus, tomatoes, salt and pepper. Cook for 7-10 minutes until asparagus is tender, tomatoes are soft, and Beyond Sausage has a crisp sear
4. Add pasta, lemon juice and stir until everything is coated.
5. Taste the perfection!⁣
