Vegan Mushroom Pasta with Spinach 🌱

Ingredients:
400gm – Ricatoni Pasta
7 – Button Mushrooms
150gm – Baby Spinach
3 – Garlic Cloves
1/2 Inch – Ginger
1 – Jalapeño
1 – Onion
2 Tbsp – Soy Sauce
1/4 cup – Plant Based Cream
1/4 cup – Pasta water
1 Tbsp – Olive oil
Salt and Pepper as per taste

Directions:
-Cook pasta in salt water, add 1 Tsp cooking oil to keep the pasta from sticking, cook it ‘al dente’ read instructions on package.
-Heat up a pan with Olive oil. Add onions and Mushroom. Saute till onion turns light brownish.
-Add minced garlic, mix well and add soy sauce, pasta water and plant based cream. Saute for about 2-3 min or longer.
-Add Spinach and cook for 2-3 min till wilted. Season it with salt and pepper as per taste.
-Add Pasta ‘al dente’ and mix well.
-Turn off the heat and cover for a while. Serve hot.
