(healthy, creamy and delicious)

Im sharing this recipe again because this is one of my favourite things to eat. This recipe is not only super easy and delicious, but is relatively healthier than most vegan mac and cheese available out there and it can be done with ingredients we all (vegans) have on our pantries.
?1 pound elbow pasta (gluten-free if needed)
? For the vegan cheese:
?2 cups potatoes, peeled and chopped
? 1 cup carrots, peeled and chopped
? 1/3 cup olive oil
? 1/2 cup unsweetened plant milk
? 1/3 cup nutritional yeast
? 1-2 tbsp lemon juice
? 1/2 tsp turmeric ⠀⠀
? 1/2 tsp paprika ⠀⠀
? 1/2 tsp garlic powder
? 1/2 tsp onion powder
? 1 tsp salt

? Boil or steam the potatoes and carrots in a large pot until soft, for about 20 minutes.
? Meanwhile, cook the pasta according to package directions. Drain and set aside.
? Once the potatoes and carrots are cooked, place all the vegan cheese ingredients in a blender and blend until smooth.
? Mix the cooked pasta and the vegan cheese in the pot and stir carefully. (I like to add some spicy breadcrumbs to mine, but that’s optional)
? Serve and enjoy
