Ingredients: 1, 5 oz can of tuna fish; 1 cup rinsed low-sodium cannelini beans; 1/2 cup chopped cherry tomatoes; 1/4 cup chopped scallions; 2 Tbsp olive oil; 1 Tbsp lemon juice; 1 Tbsp fresh chopped basil or 1/4 Tbsp dried; salt and pepper to taste (optional)
1. In a bowl, combine the tuna fish with the cannellini beans.
2. Chop the cherry tomatoes, scallions, and basil and add to the bowl.
3. Add the lemon, olive oil, and other spices and mix. Serve over spinach, mixed greens, or other greens of choice for a delicious meal full of protein and vegetables.
