Traeger Daddy’s Bourbon Belly Bites Recipe
3 pounds Pork Belly
Dry Rub:
1/4 cup Kosher Salt
1/4 dark brown sugar
1/8 cup pepper (restaurant grind)
1/8 cup paprika
1/8 cup garlic powder
1/8 cup onion powder
3 tablespoons coffee
1 teaspoon cinnamon
TX Texas Straight Bourbon Whiskey
2 cups Ketchup
1 cup Brown Sugar
1/2 cup orange marmalade
1 clove Garlic (minced)
1/4 yellow onion (minced)
4 tablespoons butter
3/4 cup Apple cider vinegar
1/4 cup TX Texas Straight Bourbon Whiskey
1 tablespoon Chile powder
Salt and pepper to taste
1. Set Traeger temp to 185 Super Smoke ??
2. Cube pork belly into 1 inch bites
3. Season all sides with rub
4. Place each bite on a wire rack and set rack in Traeger
5. After the 1st hour begin spritzing with TX Texas Straight Bourbon Whiskey. Spritz every 20-30 minutes
6. Make BBQ Sauce:
In a sauce pan, melt butter, add onions, and cook til translucent then add garlic, cook 2-3 minutes.
Add Ketchup and Brown sugar and remaining ingredients let boil on low for 10-15 minutes
7. Remove Bites from Traeger
8. Set Traeger temp to 275
9. Add more dry rub to the bites
10. Place bites in an aluminum pan and cover in the bbq sauce you made.
11. Put the un covered aluminum pan on Traeger for 45-60 minutes
12. Once sauce has adhered to bite remove from the grill and place each Bourbon belly bite on parchment paper
13. Let rest/cool and Enjoy ?
