Made from fresh tomatoes !! This was super simple to put together and so delicious that even I (as someone who doesn’t really like tomatoes) wolfed it down!

Ingredients: 2.5 lb tomatoes, quartered and blended to desired consistency (remember to remove core); 1/4 large white onion, diced; salt; 1/2 tsp dried oregano; 1 tsp basil leaves; 1/4 tsp black pepper; 1.5 tsp sugar; 1 clove garlic, minced; olive oil

Pour olive oil into a wide Dutch oven (or other pan/pot) to cover bottom. Add garlic, onion, and a generous pinch of salt, and cook on high heat until onions are translucent. Add tomato, basil, oregano, sugar, black pepper, and salt to taste. Simmer for ~20-30 min with the lid askew (letting some steam out). Let cool & enjoy fresh!! For us, this amount was just enough to serve 5.
