Ingredients:
– Tomahawk ribeye steak
– Olive oil
– Salt
– Pepper
– Fresh Rosmary
– Dried Italian herbs

Directions:
– First season your steak with salt, pepper, some olive oil, and a bit of dried Italian herbs. Add fresh rosemary around and on top. Let your steak rest for about 45 minutes at room temperature.
– Fire up your grill in the meantime. You’ll want to have a two-zone cooking surface- one side should be at around 500-550 degrees Fahrenheit for the sear and the other side should be cooler for the slow cook afterwards.
– Once the searing side of your grill is ready, place your steak on the grill and press down. Sear on each side for about 5 minutes.
– After the sear is complete, move the steak over to the cooler side. If you have a raised rack place it on that.
– Take a shallow aluminum pan and place butter, garlic, and fresh thyme inside. Place the pan on the grill underneath the steak (this will catch the drippings from the beef that you can baste back on for more juicy flavor ?). Keep your steak on the cool side for about 30-45 minutes for a nice and slow cook.
– Once your steak is done, take it off the grill and place it on a cutting board for about 15 minutes before cutting.
– Serve with your favorite sides!
