This super-cozy bake is inspired by classic Eastern European cabbage rolls and combines layers of ground beef sauce and cabbage all topped with cheese and baked in the oven!

Cabbage Roll Casserole

2 tbsp vegetable oil
1 large onion, chopped
1 carrot, grated
1 pound ground beef
3 garlic cloves, minced
28-oz can tomato sauce, divided
2½ Boursin Cheese (substitute with cream cheese or sour cream)
1 tsp paprika
1 tbsp dill weed
1 tsp Italian blend seasoning
1 tsp coriander seed, ground
1 tsp fennel seed, ground
½ teaspoon salt
pepper to taste
1 cup cooked rice
1 small(ish) head cabbage, shredded
1 cup shredded cheese (Mozzarella, Gruyère or Dubliner)

1. Heat oven to 375°. Start by prepping the beef filling. In a large skillet, cook onion and carrot over medium heat. Set aside. Cook beef, crumbling, until it’s no longer pink, then mince 3 large garlic cloves and cook for another minute. Add rice, 18 oz tomato sauce, Boursin Cheese, paprika, dill weed, salt, Italian, coriander, fennel. Bring to a boil, reduce heat and simmer for 5 minutes. Remove from heat.
2. Layer a third of the cabbage in a greased baking dish. Top with half the beef sauce. Repeat layers; top with remaining cabbage. Pour remaining tomato sauce over top.
3. Cover and bake 45 minutes. Uncover; sprinkle with cheese. Bake for 15 additional minutes. Sprinkle with fresh dill and ground pepper.
4. Serve over boiled/baked potatoes and topped with sour cream.
