These Meatballs Are Life Changing, They Were An Excuse To Us



These meatballs are life changing, they were an excuse to use turnip tops but really this is all about the porchetta, fennel sausage meat balls😍😍😍. The warm spices and fennel in the prochetta (missing from the ingredient pic) flavour the sauce and the fresh tomatoes make it lovely and fresh and sweet.



For 4
Meatballs:
6 sausages skins removed
100g porchetta slices chopped up
1/2 tsp fennel seeds crushed
1 garlic clove crushed
Salt and pepper

Sauce
8 ripe vine tomatoes, blanched and peeled
2 cloves garlic sliced
Bunch of turnip or leaves

400g dry spaghetti cooked
Grated Parmesan.

Combine the ingredients for the meatballs, mixed and roll in to balls (makes about 20). Heat some oil in a pan and sear the meatballs. Add the chopped peeled fresh tomatoes and cook for 10-15 minutes until tomatoes break down. Meanwhile cook the spaghetti. To finish add the turnip tops to the meatballs and wilt. Combine the cooked spaghetti with the meatballs and sauce. Serve with Parmesan.
