These are so simple and yummy! When banana ? starts to brown I make these! So easy! Gluten and nut free!


Ingredients
2 ripe medium bananas, peeled
2 eggs
1⁄3 cup vegetable oil + more for oiling
1 pkgSweet Banana Bread & Muffin Mix (Pkg of 2)
Toppings (optional): Top with prepared Caramel Sauce (icing variation; see recipe on pack). Finish with Cocoa Crunch Whole Food Topper or Tutti Fruity Whole Food Topper.

Preparation
Using Basting Brush, generously oil two Muffin Makers.
In a large bowl, mash bananas; they should measure about ¾ cup. Add eggs and oil; whisk to mix. Stir in mix.
Divide batter evenly into pans filling cavities.
In two batches, microwave on high for 3 min. Rest in pan for 5 min; invert onto wire rack to cool. Or bake in preheated 375° F oven, 15–18 min. Cool in pan 10 min; unmold.
