Strawberry Muffins 🍓


(Gluten free, dairy free and vegan option)

Before covid, one of my favorite breakfast items were the strawberry muffins from eat n park, but since the salad bar is closed, I had to figure out how to make some of my own and how to make them healthy. I decided to make them with Greek yogurt and stevia so that they taste delicious and now are only about 90 calorie per muffin!

Recipe:

– 2 1/2 Cups Oats
– 1 Cup Yogurt (I used oikos triple zero vanilla with some strawberry mixed in)(Sub with vegan yogurt for dairy free/vegan)
– 2 Eggs
– 1/2 Teaspoon Baking Soda
– 1/2 Teaspoon Baking Powder
– 1 1/2 Cups Chopped Strawberries

Preheat your oven to 400 degrees F. Pour the oats into a blender and blend until a flour consistency is reached. Combine all ingredients in a large mixing bowl then pour into a heavily greased muffin pan. Bake for 20-25 minutes then let cool for 10 minutes.
