🌱Spinach & Quinoa Salad with Balsamic Vinaigrette

Today I added some quinoa over my spinach and topped it with some fresh vegetables that I had in the fridge. To make this salad, here is what you will need! Serves about 4- 5 people!

Ingredients
• 1 cup of quinoa
• 2 cups of water
• 1 vegetable bouillon cube
• ¼ cup frozen corn or peas
• 3 cups of spinach
• ¼ cup red cabbage
• ¼ cup black olives
• ¼ cup orange bell pepper
• ¼ cup cherry tomatoes

Vinaigrette dressing
• ¼ cup balsamic vinegar,
• 4 Tbsp olive oil
• 3 Tbsp lemon juice
• 1 tsp sesame seeds
• 1 tsp honey
• ½ tsp sesame oil

Directions
1. In a medium sized saucepan, add quinoa, water, frozen corn/peas and vegetable bouillon cube, simmer on low for 25 – 30 mins or until quinoa is fully cooked. Fluff with a fork and let steam escape.
2. In a small bowl, add all vinaigrette dressing ingredients together and whisk until well combined, set to the side.
3. In a large salad bowl, add spinach, cooked quinoa and remaining vegetables listed above. When you are ready to serve, pour vinaigrette over, toss well and serve! Enjoy!
