SPAGHETTI MONDAY 🤩🤤🍝🌿 THANKS —> @__eatkind EASY VEGAN PESTO PASTA 💚!

This great recipe is inspired by the @minimalistbaker vegan pesto recipe! Paired it with some sautéed shiitake mushrooms and a quinua spaghetti pasta. A very simple and healthy dish 😋

INGREDIENTS:
Pesto 🍃:
2 cups of fresh basil 
3 tbsp pine nuts
3 garlic cloves 
2 tbsp lemon juice
3 tbsp nutricional yeast (VITAMIN B12 source!)
1/4 tsp salt (pink or sea salt)
3 tbsp extra virgin olive oil
2-3 tbsp water (plus more as needed)
Sautéed Mushrooms 🍄:
1/2 cup of shiitake mushrooms (or any other mushroom)
1/2 tbsp olive oil
1-2 tsp seasoning (Everything But the Bagel works great!)

PREPARATION:
1. In a food processor add the basil, pine nuts, garlic, lemon juice, nutricional yeast, and salt. Blend until everything is well combined and a thick paste formed. Add the olive oil. Then, add the water tbsp by tbsp to see if more is needed. The consistency of the pesto should be not too liquid nor too thick, just a pourable sauce.

2. Cook your pasta as instructed. I used a gluten-free quinoa spaghetti pasta by @pastaeldorado . Perfect for some extra protein in your meal.

3. Cut your mushroom in stripes and sauté them in olive oil in a pan. Add spices and salt to your liking.

4. Combine your pesto with the pasta and add the mushrooms in. ENJOY 🤤!!!
