Soy mince Tacos ? ,a coriander and lime green bean salad ? and guacamole ? [details below] ✨

Today’s post is a collab with some lovely foodies, and our theme was Mexican! So we’ve all created a Mexican inspired dish. Swipe to see everyone’s creations ➡️ All tagged below – make sure you give them all a follow because I love all of their pages ?

I made a soy mice chilli with kidney beans, served in @oldelpasouk taco shells with refried beans, homemade guacamole, vegan cheese, jalapeños and fresh tomatoes. On the side I made a grilled green bean salad, which was so simple but such a fresh palette cleanser from all the chilli (I like my food pretty spicy ?)

Ingredients: ✨
– 300g fresh green beans (mine were picked fresh from the garden)
– handful fresh coriander
– pinch salt
– cracked black pepper
– 1 garlic clove
– 2 tbsp olive oil
– juice and zest 1/2 lime

1. Grill the green beans on a grill pan on a medium high heat, turning very few minutes when the beans start to brown. They should take about 8-10 mins total to cook.
2. Mix remaining ingredients in a food processor or chop everything finely and mix by hand.
3. Toss the beans in the vinegrette, season with black pepper and serve warm or cold! ITS THAT SIMPLE.
