Smoked Mackerel…Cauliflower Pizza!!👌🏼😋
Nut Free/Low Carb/Keto/Grain Free/Gluten Free
This is an easy peasy 3 ingredient pizza base
I often use a mix of broccoli and cauliflower…
No need to be super exact with ingredients
And is nut/almond flour and coconut flour free
Ingredients for 2 people – 10g Total Carbs/7g Net Carbs (365 calories) each
I used cauliflower I had ‘riced’ in bulk! and frozen, 10g per bag…so handy!!
And added no herbs…just simple S&P
Fresh or dried herbs…spice mixes like Za’atar…garlic powder…chilli are great to add too…
👩🏻🍳 ~ INGREDIENTS
>285g/10oz Riced fresh cauliflower and/or broccoli
>90g/3oz Ready grated Parmesan
>1 Free range egg @beechwoodeggs
Heat oven to 180C/350
Dry fry the ‘rice’ in a non-stick pan, tossing regularly for 5 or so mins to evaporate much of its moisture, if it catches a little and browns don’t worry.
Tip the cauliflower into a bowl, let it cool off a little.
Add the grated cheese, egg and any herbs if using…mix well
On a lined baking tray form the mixture into two equal sized bases or one large one…about 1/2cm thick.
I pat the mixture down with my left hand and hold a spatula in my right hand…to keep tapping round the edges…keeping it neat.
Cook for 10 mins and check to see if it’s ready…should be lightly browned.
Top with your pizza faves
or leave to cool and top and cook later
I topped with Smoked Mackerel and…lots of leftovers!!
Homemade tomato sauce…several types of cheese…mushrooms
Red onion, Fennel and lemon slices
Cress after it was cooked
