Salmon, feta and sweet potato puff pastry pizza!
This is such a lovely lunch or dinner idea for the family when you have leftovers! I made grilled salmon and sweet potato for dinner last night so added it to these lovely pastry slices! I love the flavour combo of these but you can add whatever you like! Our favourite veggies are on this one! 🍠 🍃
2 @pampaspastry puff pastry sheets
300g grilled salmon
200g crumbed feta
200g sweet potato, thinly sliced
1 large green capsicum (or any colour)
2 tbsp tomato paste
1 cup Parmesan cheese (you can use grated cheese)
1 cup baby spinach leaves
2 tsp semi dried basil
1 tsp extra virgin olive oil
Preheat oven to 190 degrees.
Line a chopping board with baking paper and place a thawed piece of puff pastry on top. Add tomato paste to the puff pastry and sprinkle basil and Parmesan cheese on top. Then scatter the rest of the ingredients, leaving about 3cm from the edges.
Fold over the edges, forming a crust. Brush the folded edges with olive oil.
Place in the oven for 20 minutes or until the pastry is golden and cooked on the bottom. The ingredients makes 2 pizzas.
