Quick, easy, high protein lunch and dinner idea
Ingredients serves 4
650g raw chicken breast
1 onion
1 carrot
1/2 red capsicum + 1/2 green capsicum
2 tomatoes
1 Tbs olive oil
Chilli flakes, paprika, garlic powder to season
Method πŸ‘©πŸ»β€πŸ³
1. Slice all veg length ways into thin strips.
2. Heat oil in a large pan on medium heat. Add onion and fry.
3. While onion is cooking, cut chicken into even strips.
4. Add to the chicken and seasoning. Cook, stirring occasionally, until chicken is tender and no pink is in the middle.
5. Remove onion and chicken from pan. Keeping pan hot, add the other veg. Add 2Tbs of water and cook until veg has softened.
6. Add chicken back to the pan, stir together and serve.
PRO-TIP: Serve with some rice and salsa for a well balanced delicious meal ✨.
