Protein Cake No oil, no butter!
This recipe calls for pumpkin puree and Banana. The flavor is very interesting since you can barely detect the pumpkin puree. It makes the cake very moist and it has a lots of fibers.
For 1/2 of the cake you get 317 calories C40g F4g P30g and 10g of fibers. So it’s amazing!
200g mashed banana
65g pumpkin puree
45g liquid egg whites
3 tbsp swerve or less if you want it less sweet
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp nutmeg
28g coconut flour
60g vanilla whey protein
1 tsp baking soda
1 tsp baking powder
Combine the wet ingredients together and in a separate bowl, combine the flour, the whey, the baking soda, the baking powder and the salt mix well and add to the wet ingredients.
Bake in the oven at 350F for about 25 minutes, monitor it since all oven baking time can be different.
Notes: You can use any kind of whey basically , unflavored, peas, soya , whatever you have or like. It’s the same for the flour, I used coconut, but almond flour or just the regular one can do. Just don’t omit it, I tried and it looks nothing like a cake if you do!
