Plant-Based Sausage, Potato and Zucchini Casserole

Ingredients
3 large russet potatoes (cut in half and thinly sliced into semicircles)
2 large zucchini (cut in half and thinly sliced into semicircles)
1 bell pepper chopped
1 tube plant based sausage cut into bite size pieces
1/2 cup bread crumbs
3/4 cup nutritional yeast
3 cloves of garlic minced

1. Preheat the oven to 400.
2. In a large bowl mix together all ingredients as well as a small amount of oil.
3. Line a large baking pan with tinfoil and place mixture in the pan.
4. Bake for 30 minutes then mix gently and bake for another 30 minutes.
