Either way, pancakes are a decadent, indulgent breakfast that I love, but can’t usually justify eating on a more than once in a while basis. But what if pancakes were actually healthy? 1- 1 large egg
2-1 small beet cooked and peeled
3-1/2 cup lite milk
4-1 scoop protein powder
5-2 tbsp oats flour or whole wheat flour
Maple syrup and berries ..
In blender purée beet and milk until smooth with no lump .Add egg , protein powder , oats flour , salt blend together like batter but don’t put over blend . Pour 1/3 cup batter in hot pan cook until 2-3 minutes until small bubble starts .
Serve with berries cacao powder and maple syrup
