Pancit is a general term for Filipino noodle dishes. We usually eat pancit during birthdays to symbolize long life, a tradition adopted from the Chinese. There are several variations of pancit but Canton is my absolute favorite. I used pork, shrimps and chicken liver but you can substitute these with chicken, Chinese dimsum, such as squid or fish balls, or Chinese sausage, whatever floats your boat.

Serves 4-6

Ingredients:
240 grams flour stick noodles (pancit canton)
125 grams pork shoulder (kasim)
250 grams shrimps
80 grams chicken liver
80 grams snow peas (chicharo)
1 pc. carrot (approx. 120 grams)
1/2 pc. cabbage (approx. 250 grams)
3 pcs. shiitake mushrooms, dried (approx. 12 grams)
1 pc. onion, small
3 cloves garlic
1 cube chicken bouillon
4 cups water
1 tsp. cornstarch
1 tbsp. soy sauce
oyster sauce
salt
pepper
vegetable oil
calamansi, to serve
