Our kale and blueberry blender muffins are the perfect summer snack! You get all the goodness of a blueberry muffin with an added boost of vitamins and antioxidants from kale! Kale & Blueberry High Protein Blender Muffins

Ingredients:

2 bananas
1-2 cups kale
1/2 cup peanut butter
1/3 cup full fat Greek yogurt
1/2 cup maple syrup
2 eggs
2 cups rolled oats
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup blueberries

Directions:

Preheat oven to 350F.
Take all ingredients (except for blueberries) and place in a blender (place peanut butter in last).
Blend until fully mixed, there should be no chunks and it should look creamy and smooth.
Fold in blueberries
Pour batter into a lined muffin tray (or use coconut oil to line the tray), filling ¾ the way full.
Bake for 20-23 minutes, or until golden on top and toothpick comes out clean.
