hey sweet spuddies! 🍠 this was suuuper fudgey but not too sweet, serving as the perfect @butterflysuperfood nut butter vehicle πŸ₯œ – thats saying A LOT as I’m not usually a nut butter fan. πŸ˜…πŸ‘ŒπŸ˜‹

recipe was inspired by @veganalexx after seeing @laurens.plate share it on her stories! 🀩 looked too good to miss out on, so i made a SUGAR FREE version & it turned out delish! 😜

RED BEAN FUDGE CAKE (recipe adapted from @veganalexx) πŸŽ‚πŸŽ‚πŸŽ‚

πŸ₯œ1 cup (240g) kidney / red beans
πŸ₯œ1/2 cup (45g) oats
πŸ₯œ1/3 cup (80g) yogurt
πŸ₯œ2 tbsp liquid sweetener + 1
OR
2 tbsp bean liquid (in can) + 2 tbsp stevia

1. Preheat oven to 190C.
2. Blend oats in blender until it resembles a course flour.
3. Add all other ingredients and blend until smooth & full combined.
4. Transfer to a lined loaf tin & swirl some yogurt / nut butter on top.
5. Bake for 40 mins & cool completely before slicing.
6. Serve with nut butter smothered on top (i used @butterflysuperfood cinnamon vanilla flavour) πŸ˜‹πŸ˜‹πŸ˜‹
