Nothing hits better than a 5 minute cinnamon french toast on a cold morning 🌧

Ingredients:
– 1 hefty slice of bread (I used whole wheat sourdough)
– 1 tbsp liquid egg whites (or 1 egg but I find it tasted too “eggy” for a single serving)
– cinnamon to taste (go crazy)
– pinch of salt
– 1/2 tsp vanilla extract
– 1 tbsp milk of choice
– 1/2 tbsp coconut oil for frying

Instructions:
Mix all of the ingredients in a shallow bowl and soak the bread. Place a pan on medium heat and melt the coconut oil. Fry the soaked bread on both sides until crispy and brown. Top with whatever you find – I used honey, banana, warmed up frozen blueberries, walnuts, and flax seeds.

Note:
I was trying to use up what I had in my pantry, but feel free to make this vegan by using plant milk and substituting the egg (whites) for either apple sauce, mashed banana or pumpkin purée to match the season.
