No instant pot? No problem, easily make this on the stove or slow cooker. 🍛
Meaty/vegeterian/vegan adaptable
Ingredients 🛒
My ‘protein’ were:
6 Links spicy italian sausage
~ 400g ground beef
~ Black bean Veggie burger from morning star
(Feel free to use veggie ground or skip this completely)
* Increase amount if you like a very meaty chilli
2 cans diced tomatoes with juice
1 small can Tomato paste
1 Diced jalapeños (Remove seeds to decrease spice level)
1 Diced yellow onion
1 Diced Green bell pepper
1 Diced Red bell pepper
3 Chopped celery stalks
1 Can of pinto beans
1 Can of red beans
8-10 Chopped basil leaves
1 Tbsp Paprika
1 Tbsp Cumin
1 Tbsp Garlic powder (I didn’t have fresh)
1 Tbsp Onion powder
1 Tbsp Dried oregano
2 Tbsp Worcestershire sauce
2 Tbsp Honey (or choice of sweetener)
300-450ml Water (or low sodium broth)
Salt & pepper to taste
* Optional add cayenne pepper to taste
* Optional 1 Can Corn kennel
* Optional 1 Can White kidney beans/Chickpeas.
Recipe 📄
Salt and pepper the ground beef. On “saute” mode, brown the sausage, ground beef, crumbled veggie burger. Reserve. Sweat the bell peppers, onion, and celery. Add the spices and cook until fragrant. Add the remaining ingredients. Add water or broth just enough to cover the ingredient. Select ‘Bean chilli’. Release pressure when the time is up. Cook uncovered on ‘saute’ mode to reduce the chilli (cook excess liquid).
Topping options: Cheese, raw onion, green onion, greek yogourt (sub for sour cream)
