➑️ 25g melted coconut oil
➑️ 250g almond butter (or any nut butter but almond works best)
➑️ 150g maple syrup
➑️ 140g almond milk (or any milk)
➑️ 2 tbsp almond extract
➑️ 140g gluten free oat flour
➑️ 168g chopped maraschino cherries
➑️ 100g cherry jam (I used shop bought @waitroseandpartners black cherry jam) – for the middle
➑️ 10g sliced almonds – for sprinkling on the top

βœ… Pre-heat the (fan) oven to 180Β°Celsius
βœ… Line a 7.5″x7.5″ (or similar) 1.5″ deep baking dish with baking paper and lightly spritz with oil
βœ… Add all the ingredients (except for the cherries, jam and sliced almonds) into a blender and blend until mixed or just mix by hand
βœ… Once mixed, add the chopped maraschino cherries and stir through
βœ… Pour half the mixture into the baking tray and smooth down
βœ… Add a layer of the cherry jam
βœ… Pour the rest of the mixture over the jam and smooth down
βœ… Sprinkle the sliced almonds on top
βœ… Pop in the oven for 25 mins and let cool before cutting them into slices
