Mushroom Tartlets🍄


Dough ingredients: (Makes around 7-8 Tartlets)
• 1 cup self-rising flour
• 2 tbsp olive oil or vegetable oil
• 1/3 cup plant-based milk (I used alpro unsweetened almond milk)
• A sprinkle of salt

Filling Ingredients:🍄
• 8-9 medium sized sliced mushrooms
• Thyme, fresh or dried
• Vegan butter for cooking
• Salt
• Pepper

Preparation🥄:

1. Preheat the oven to 190 °C.

2. In a mixing bowl, combine the flour, the salt and the olive oil. Then gradually add the almond milk while mixing by hand. Mix and knead by hand until the dough is a soft, non-sticky dough. If it’s too sticky, add more flour. If it’s too crumbly, add more almond milk.

3. In a skillet, add some vegan butter and sauté the sliced mushrooms for few minutes. Season with thyme, salt and pepper.

4. Roll the dough out and shape into circles.

5. Transfer to an oiled baking paper. Fill in the middle of the circles, and with the tip of your finger fold in the sides of the dough to create an edge. Bake in the oven for approximately 20 min, or until golden brown but not dried out.

6. Garnish with chopped parsley 🌿.
