MEATBALLS IN PEANUT SAUCE ?

You can def put peanut sauce on anything and it will taste 100x better. I learnt how to make this from my granny and I swear it’s the only peanut sauce recipe you’ll ever need ?

Ingredients for peanut sauce:
– 1 cup dry roasted peanuts
– 2 tbsp soy sauce
– 1/8 cup coconut milk
– 1 tbsp brown sugar
– 2 tbsp rice vinegar
– 1 tsp chili garlic sauce
– 1 tbsp lemon juice
– 3 cloves of garlic, grated
– 1 tbsp of ginger, grated

Ingredients for meatballs:
– approx 400g minced chicken
– 1 egg
– 3/4 cup panko breadcrumbs
– 2 garlic cloves, minced
– half an onion, chopped
– 1 tbsp Italian seasoning
– 1 tbsp paprika
– 1/2 tbsp oregano
– 2 tbsp olive oil
– 1 diced tomato
– 2 tsp hoisin sauce
– 1 tbsp tomato paste

Method:
1. For the peanut sauce, place the peanuts, soy sauce, coconut milk, sugar, rice vinegar, chili garlic sauce, lemon juice, garlic, and ginger in a food processor with 2-3 tbsp of water (depending on the consistency you want)
2. For the meatballs, take your ground chicken and season with the Italian seasoning, paprika, oregano, salt, & pepper
3. Then mix in the garlic, onion, breadcrumbs, and egg until combined well
4. Roll into about 1 inch sized meatballs and bake them for about 20 minutes in 170°C
5. In a sauce pan on low heat, combine your olive oil, tomato, hoisin sauce, and tomato paste
6. When the meatballs are cooked through, coat them in the tomato mixture, top with your peanut sauce, and serve!
