Lemon & Cherries Banana Bread – a new version of my #sugarfree #glutenfree and #vegan recipe. It turned out awesome and I am happy to share the #recipe with you:

▶️ 3 medium size ripe bananas, mashed, 1 cup soft olive oil, 1/3 cup sugar substitute 1:1 (such as #xucker ), 1 cup lemon juice, zest from 1 lemon, 1 cup chickpea flour, 1/3 cup coconut flour, 1/2 cup almond flour, 2 tsp baking powder, 1 pinch of salt. 1/2 cup pitied and halved cherries for the topping.

▶️ Preheat oven at 350ºF (180ºC).

▶️ Mix the mashed bananas with olive oil, sugar substitute, lemon juice and zest, until creamy and set aside.
|
▶️ Combine the rest of the dry ingredients and add to the the banana mixture. Mix until homogenous.
|
▶️ Prepare a rectangular loaf baking tin and pour the batter. Level with a spatula and lay the halved cherries.
|
▶️ Bake for approx. 1 hour at 350ºF (180ºC).

▶️ Let cool on a wire rack before serving.
