? Le Eggplant Kebab?

-Ingredients for Meat/Kofte:
-500gr Beef Mince
-1 1/2 teaspoons of salt
-1 teaspoon of pepper -1/2 teaspoon of cumin
-1 blended/copped onion
-Bunch of chopped parsley
-1 whole egg
-1/2 cup of bread crumbs -4 Eggplants

-Topping Sauce:
-1 tablespoon of capsicum/pepper paste
-1 teaspoon of salt
-1 1/2 glass of water -1 Crushed Clove of Garlic (optional)

-Step 1: Chop the eggplants into 5-6cm sizes and let it sit in cool salty water (1 tsp salt) for 20mins.

-Step 2: Mix the beef mince with the ingredients and let it rest for 1 hour (or less if you have limited time)

-Step3: Wash the Eggplants and start lining it with your shaped beef mince (aka Kofte).

-Step 4: I placed tomatoes, onions and capsicums in the middle of my Eggplant Kebab for extra flavour and sides. This step is optional.

-Step 5: Mix your ingredients for the topping sauce and drizzle it over the top of the Eggplant Kebab. I added Parsley on the top for a bit of flavour and presentation. –

-Step 6: Preheat the Oven 180 degrees. Cover the tray with foil and let it cook for 45 mins. Then take the foil off and continue cooking it for another 10-15mins

-Serve with Rice and Cacik/Ayran
