It’s guac-tail hour! ? What’s a better happy hour snack than some loaded guacamole? We’ll wait…that’s what we thought, nothing. ? This guac can be enjoyed by both gluten and dairy-free snackers!
? Ingredients: 5 ripe avocados, mashed; 1 cup rinsed and drained black beans; 1 cup fresh corn (can use frozen, but let thaw completely); 1 small red onion, finely diced; 4 Roma tomatoes, finely diced; 1 jalapeno, seeded and minced; 1/4 cup minced cilantro; juice of two limes and fajita seasoning, to taste
? Instructions: Combine all ingredients in a large bowl. Mix to combine. Serve.
If making ahead, cover with plastic wrap, pressing the wrap down onto the surface of the guacamole to prevent it from browning. Refrigerate until ready to serve.
