In Chhattisgarh Pumpkin Cover Is Never Thrown As Its Used Wi

In chhattisgarh pumpkin cover is never thrown as it’s used with Indian brown lentil/Masoor to make veggie which is ‘मखना फोकला के साग’.
.
So here I have experimented with it to REDUCE my kitchen waste and consume it beneficially. The majority of things I have used are considered waste and are thrown out.

Ingredients ;
• chopped peel of 2 unripe banana
• chopped pumpkin cover
(Ratio of both peel offs 1:1)
• skin waste of 3 drumstick
• fenugreek seed 1tbsp ( I have used the left out from fenugreek tea)
• 1 cup boiled brown lentil/masoor (I had left over from masoor kadhi)
• 1 chopped onion, tomato
• salt, turmeric chilli coriander powders
• oil
.
Procedures :

Heat oil in a pan adding fenugreek seed, drumstick skin waste, onion and fry for a while.
Now add the peel off’s with salt, turmeric coriander chilli powders. Mix it up and cover the lid in low flame for 5 min.
Open the lid add tomato stir again close, then add the boiled masoor.
Mix it all up and turn off the flame.
.
P.S. All were thinking what this veggie is but couldn’t get it, yet they ate well.
