Hummus & co platter by @rainbownourishments. Who knew that veggies could be so pretty and pastel?! Imo, hummus is best with crispy things such as homemade falafel, baby cucumbers, baby carrots, capsicum and tomatoes ?. The trick to getting ultra smooth hummus is adding BAKING SODA to the chickpeas while they are cooking. Serious game-changer!

Recipe:
EXTRA CREAMY HUMMUS
1 x 400g can chickpeas
1/2 tsp baking soda
1/4 cup tahini
3 cloves garlic
3 tablespoons olive oil (or sub water)
2 teaspoons cumin
1/2 lemon, juice and zest
1/2 teaspoon salt
.
1. Optional step: Bring a small pot of water to the boil. Add the chickpeas, its aquafaba (soaking water) and the baking soda. Simmer for 20 minutes or until the chickpeas are very soft and falling apart.
2. Remove the chickpeas from its cooking water. Add the chickpeas and rest of the ingredients to a high-powered blender. Blend until as smooth as possible. Add some of the cooking water to help the blender and for a thinner hummus.
3. Pour the hummus into a serving dish. Sprinkle with smoked paprika. Serve with falafel, crudites or as desired.
