Homemade Vegan Mint Chocolate Chip Icecream!! (RECIPE BELOW)



Homemade vegan mint chocolate chip icecream!! (RECIPE BELOW) Why have I not done this before!? My all time favourite flavour but defo want to try more, what shall I make next?


Ingredients:
400ml coconut milk
400ml coconut cream
100g sugar
60ml golden syrup
1/2 tsp peppermint extract
1/2 tsp green food colouring
100g dark chocolate

Method:
-The day before, place the bowl of your icecream maker in the freezer and prepare the base of the icecream by heating coconut milk, coconut cream, sugar and golden syrup, constantly stirring and bring to a simmer. Then take off the heat and use an immersive blender on the mixture for 30 seconds. Transfer to an air tight container and refrigerate overnight.
-The next day add the peppermint and food colouring (add more for desired taste and colour) and transfer to your assembled and already switched on icecream maker. -While it churns, chop your chocolate and after 20 minutes (at soft serve consistency) add to the mix.
-After 5-10 more minutes transfer to a freezer safe container and let it set for at least 4 hours. 🍦🍦🍦
