Here is my tried and true recipe for Carbonara Noodles.
-Salt to taste
-Black pepper to taste
-5-7 pieces of bacon diced
-1 1/2 pounds crimini mushrooms
-6 garlic cloves
-2-3 medium shallots diced
-1/2-1 cup of peas
-5 large egg yolks
-1 large egg
-5 plus oz of grated parm
-1 pound bowtie noodles
Combine eggs and parm into a bowl and mix. Once the bacon is finished cooking add bacon to egg and cheese mixture.
Brown sliced mushrooms in 3 tbs of bacon fat once browned add diced shallots, diced garlic, and peas.
While shallots, garlic, and peas are cooking add noodles to boiling water.
Set aside about 1-2 cups of pasta water then drain al dente noodles.
Add noodles to the pan with the mushrooms, shallots, garlic, and peas with about 1/4 of a cup of pasta water stir to combine.
Add about 1/4 of pasta water to egg, cheese, and bacon mixture while stirring constantly as to not cook the eggs. Once done take this mixture and add to the noodles, mushrooms, shallots, garlic, and peas again mixing so that the eggs do not scramble.
