Hello #meatlessmonday with @authenticbeautyconcept ! How about a peach and cherry crumble with oats and coconut ?
This is a great rustic summer recipe ! The combination of the cherries and peaches is an excellent balance and the grapefruit zest is an unexpected twist. Serve with coconut icecream for a real treat.
Recipe for 6 💫
3 peaches, thinly sliced
6 cups fresh pitted cherries
1 grapefruit, zested and juiced
1 tablespoon maïzena
200g sugar
250g (1 cup) oats
120g (half cup) almond flour
100g coconut oil
2-3 tablespoons dark sugar (rapadura)
Pinch of salt
Preheat oven to 180°C.
In a large bowl, add the sliced peaches and pitted cherries. In a small bowl, combine the juice from the grapefruit, the maizena and the sugar. Mix to combine. Pour over the fruit and stir gently to cover evenly. Add the grapefruit zest. Set aside.
For the crumble, blend half of the oats, the almond flour and the sugar in a robot coupe or a blender. Pulse in the coconut oil. Add the remaining oats and mix gently with your hands to combine while working the coconut oil evenly into the mixture.
Pour the fruit mixture into a baking dish. Top with the crumble. Bake covered for 30 minutes. After 30 minutes, uncover and allow to bake for another 20- 30 minutes. Survey the crumble so it doesn’t get too toasted on top ! Let cool slightly before eating. Serve with coconut ice cream !
