Hello all, As you know I love cooking and Pandemic has given me another chance to work on this hobby of mine!

Here is a Low carb almost keto #PadThai recipe for you all!

Dried shirataki noodles
This is the brand I use
2 Tbsp olive oil
1 block tofu cut in small pieces
1 green onion, cut in small pieces
¼ red onion, cut in small pieces
1 red bell pepper, jullienned
1 Carrot, jullienned
2-3 cloves garlic, minced
1 cup shredded purple cabbage
1 cup bean sprouts
1 lime
1 thai chili, minced

2 Tbsp almond butter
2 Tbsp Tamarind paste
2 Tbsp vinegar (whatever you have avialble, I use balsamic vinegar)
4 Tbsp soy sauce
1 Tbsp local honey (I use local orange blossom honey)

Fresh cilantro
Green onions
Roasted cashew or Peanuts
Bean sprouts

Cook the shirataki noodles as per instructions on the package. For the one I use, I cook them in hot water for 5 minutes. Drain and cool them immediately with tap water.
Put olive oil in a nonstick pan and cook tofu till its crispy on all the sides.
Mix almond butter, tamarind, soy sauce, vinegar and local honey in a small bowl and whisk it till it has smooth dressing consistency.
Chop all the veggies. Take the same nonstick pan, add garlic, green onion and red onion, once its lightly golden, add tofu, then all the veggies, Avoid overcooking the veggies.
Add cooked shirataki noodles.
Add the padthai dressing now. Mix well. Stop the heat
Serve with cilantro, green onion, thai chilli, cashews, lime wedge and bean sprouts

Shirataki noodles are Japanese noodle made up of konjac yam full of water and fiber. It has almost no calories and virtually no carbs, making it perfect for any diet — especially the ketogenic diet.
