– 1 cup of blanched almond flour
– 1/2 cup tapioca flour
– 2 teaspoons baking powder
– 1/2 teaspoon of salt
– 1 large egg
– 1/4 cup + 1 tablespoon of Kerry good butter
– 1/2 cup coconut milk
– 1 teaspoon lemon juice

Process:
-Preheat waffle maker
-Mix all ingredients to create waffle batter
-spray griddle with oil and pour batter into preheated griddle. Times may vary. Recipe will yield between 4 to 10 waffles depending on the thickness of each waffle you make.

Optional: Feel free to sprinkle blueberries on top of the waffle in the end for additional nutritional value.
