Turmeric- 1/2 tsp
Chilly powder- 1 teaspoon
Salt- as required
Vinegar- 2 tbs
Onion sliced- 5-6
Onion sliced- 1 to fry
Ginger finely diced – 1 tbs
Garlic finely diced- 1tbs
Tomato diced- 3-4
Green chilly finely chopped-5-7
Mint leaves finely chopped- 1 bunch
Coriander leaves finely chopped- 1 bunch
Cashews -2tbs
Sultanas- 2tbs
Ghee- 4tbs
Lemon juice- from 1 Lemon
Jeerakasala rice- 3 cups
Water- 6 cups
Whole spices
Cardamom- 3-4
Cinnamon- 1 inch
Cloves- 5-6
Star aniseed-2
1. Marinate the fish with turmeric, chilly powder,salt and vinegar and let it rest for atleast 15-20 min
2. Shallow fry the fish and keep it aside
3. Heat up 1 tbs of oil and add the sliced onions, sauté the onions well until brown.
4. Add garlic and ginger followed by green chilli and keep sautéing, I normally sauté for about 15-20 minutes until the raw smell is gone.
5. Add the tomatoes and sauté for another 10-15 minutes. Make sure you add salt to taste.
6. Add lemon juice cook for 5 minutes
7. Add the chopped coriander leaves and mint and mix well
8. Add the fried Fish and cook it for 10-15 minutes
1. To cook the rice add 3tbs of ghee in a pot and add the whole spices
2. Add the water and enough salt. Once the water starts to boil add the rice
3. Let it boil until water and rice come to the same level. Cover the pot and turn off the flame. Let it sit and cook for 20-30 minutes.
4. Fry the cashews and raisins in ghee
5. Fry one onion until brown and crispy
6. Now take a bigger pot, heat it up and add some ghee. Once it is melted add one layer of the Masala then a layer of rice, sprinkle some cashew and sultanas, then some fried onions. Then repeat the layers until you get rice on top.
7. Preheat the oven to 90 degree and put the pot in for 20 minutes.
Take it out, as always don’t forget to add a bit of LOVE and let everyone feel the JOY❤️
