Ingredients: For the base. 500g flour, 250g butter, 4 egg yolks, 75g powdered sugar, pinch of salt, 1 vanilla sugar, cold water. For filling 400g jam. For meringue. 8 egg whites, pinch of salt, 240g sugar, 1 vanilla sugar, 200g grated nuts, 1tbl powdered sugar.

For the dough mix in a bowl the flour, salt, powdered sugar, vanilla sugar and cold butter till you have a sandy base. Then add water (2-4 tbl) and mix. Wrap the dough in a plastic foil and put it in the fridge for about 15 minutes. Preheat the oven at 200 degrees. Cut a baking paper with the dimensions of the oven tray and leave 2 or 3 cm extra on each side. Start rolling the dough on the sheet add put it into the oven tray. The dough should have a 2-3 cm edge to line the sides of the tray. Stab the dough sheet with a fork everywhere and bake it for 15 minutes. For the meringue, grate the nuts. Beat the egg whites with a pinch of salt, till you get a sturdy foam then add the sugar and vanilla sugar till you get a sticky and sturdy foam. Add the nuts and mix gently by hand. Leave the base to cool down for 2 or 3 minutes, then spread the jam evenly. Then, add the meringue the same way. Sprinkle it with some powdered sugar. Reduce the oven heat to 140 – 150 degrees and bake it for about 20 to 30 minutes. Leave it to cool down then cut it in pieces.
