šŸ’«FALAFEL BOWL TIMEšŸ’« I havenā€™t posted a good ole fashion Buddha bowl this past week so thought I would treat you all to this Mediterranean style bowlšŸ˜ I decided to try out some store bought falafels for the first time and they did not disappoint! This is the perfect filling bowl to jam pack your day with plant proteinšŸ’ŖšŸ»

This bowl features hummus, roasted cauliflower, roasted sweet potatoes, roasted broccoli, and prepared falafels on a bed of couscous with a tahini drizzle to finish!

INGREDIENTS (2 servings)

Falafels (store bought or homemade)
Hummus (store bought or homemade)
1/2 head of cauliflower, cut into florets
1 small head of broccoli, cut into florets
1 large sweet potato, peeled and chopped into cubes
Couscous (any type of grain works)
Tahini sauce *see previous posts for recipe or DM me and Iā€™ll send it to you*

STEPS

1. Preheat oven to 200 Celsius. Place sweet potatoes, broccoli, and cauliflower onto baking sheet with parchment paper. Season with salt and drizzle olive oil over top. Cooking for 20-25 minutes and stir half way through.

2. Meanwhile, cook couscous according to package. Make tahini sauce and heat up falafels in the oven.
3. Once vegetables are done, assemble the bowl as seen in the photo. Drizzle the tahini sauce overtop and place the hummus in the middle. Enjoy!
