Did you see the Meatless Monday post with the big chunks of portobellos? Well I had left over shrooms so……I made bacon! Come at me BLT wraps with avocado aioli 🙌🏻😍🤤 ⁣

I’ve posted coconut bacon before and now it’s time for the mushroom version. Omg! So yum!⁣
Thinly sliced is the key to crispy portobello bacon. I also like to marinate the portobellos over night.⁣

Here’s the portobello goodness 🥓 ⁣

Portobello Crispy “Bacon”⁣

Ingredients:⁣
1/2 cup thinly sliced portobello mushrooms; wipe clean and remove stem if purchased whole ⁣
3 tsp liquid smoke ⁣
1/8 cup maple syrup⁣
1 tsp paprika⁣
1/2 tsp chili powder⁣
2 tbsp coconut aminos ⁣
1/2 tsp black pepper ⁣

Directions:⁣
-clean and remove stems of portobellos if needed, slice very thin ⁣
-whisk all other ingredients together in a bowl ⁣
-marinate portobellos for 2 hours at least or overnight⁣
-roast mushrooms at 425 degrees for 12 minutes a few inches apart on a parchment paper covered baking sheet⁣
-flip and roast for another 12 minutes⁣
-for extra crispy, switch oven to broiler and broil for 1-2 minutes⁣
