Current debate: SWEET POTATO FRIES with BEET KETCHUP, MIXED SWEET/RUSSET FRIES with DAIRY FREE CHEESE or CHIPOTLE LIME SWEET POTATO FRIES with TURMERIC HONEY KETCHUP? Happy FRY-DAY!! some FRY-day inspo! Love some potatoes in any form, but especially fries. Remember to soak them (soaking in ice water gets them nice and crispy!) I want to air fry a bunch for the weekend. These dishes were actually baked in the oven, but I usually use my air fryer these days. Which would you choose?! ? Happy weekend loves! 1️⃣ Japanese and regular sweet potatoes seasoned with salt/pepper/paprika. Beet ketchup: 2 large beets roasted (peeled and cubed), 1/2 Cup apple cider vinegar, 14 pitted dates, 1/4 tsp clove, 1/2 tsp fresh ginger, 1/2 tsp onion powder, 1 clove toasted garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper and a pinch of red pepper flakes.
2️⃣ SAUCE: 4 cups of water (or broth), 2 medium sized Yukon gold potatoes peeled and diced, 2 medium carrots washed and diced, 1/2 chopped onion, 1/2 cup raw cashews, 1/4 cup whole fat coconut milk or cream, Juice from half of a lemon, 2 tbls nutritional yeast, 1/2 tsp salt (or more to taste), 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/4 cup fresh dill (or any herb). Directions:
In a large pot boil about 4 cups of water (or broth). Boil the veggies in the water for about 10-15 mins until soft. Save 3/4 cup of the water from veggies once they are done. Remove veggies and place in a blender with the rest of ingredients and the water. Blend until smooth.
3️⃣ Fries: 1 large Japanese sweet potato cut into fries, seasoned with 1/4 tsp each (or more for more fries) of salt, chipotle chili powder, garlic powder and onion powder and 1/2 teaspoon lime zest. Coat with oil and air fry on 390 for 10-13 minutes. Turmeric Honey Pepper Ketchup:
6 oz can tomato paste, 2 tbls balsamic vinegar, 1/4 cup water, 1 tbls of honey (Could sub maple syrup for vegan), 1 teaspoon coconut aminos, 1/2 tsp salt
1/4 tsp turmeric, 1/2 tsp onion powder, 1/2 tsp of garlic powder, 1/4 tsp mustard powder, 1/4 tsp cayenne, 1/8 tsp black pepper, pinch of ground all spice. Whisk all together and store in fridge.
